Local fish and seafood are from Kuala
Selangor fishery. Catch is freshly delivered and hand selected for best
choices. All preparation ie gutting, scaling and slicing are immediately
completed before individual fish, fillets or steaks/cutlets are pack and deep
freeze to retain freshness.
Black pomfret/Bawal Hitam (aka Hak Chong
in Cantonese) averages between 800g to 1kg+ before gutting. Size is good for
3/4 pax serving.
