It is a long and slender fish. The local tenggiri (Chok Kau in Cantonese) is favour because of the flaky and firm texture. The size could range from 3kg to 5kg. Cutlets from the fish ranges from 50g to 200g depending on which part of the fish. Each pack may have 1, 2 or 3 slices and would average about 200g.
This fish is usually used to make curries, deep fried or pan fry with a coat of flour.
