Lemon sole is also known as Flounder. It is a flat fish with very scaly skin.  If cooked with skin on, it has to be peeled off and only the flesh is consumed. 

The skinless fillet is firm and is suitable for batter coated deep fry or fan fry with a coat of flour. The Chinese usually use in stir fry with ginger and scallion and other deep fry dish like Sweet and Sour Fish. It is best to par-boiled in oil before stir fry.
